This video shows the method of preparing Fish Masala Wrapped in Banana Leaf.
Keep a kilogram of cleaned slices of Seer fish, Pearl Spot or Pomphret ready.
In three or four tablespoons of coconut oil, sauté the following:
Thinly sliced onion - 4 to 5 no.
Thinly sliced ginger - 2 to 3 inches
Thinly sliced garlic - 10 to 12 cloves
When the sautéed mixture become light brown, remove from the fire and keep the mixture aside in another vessel.
Now, into the same pan, pour two tablespoons of oil and roast a paste made with the following:
Chilli powder - 4 tsp
Turmeric powder - ½ tsp
Fenugreek powder - ½ tsp
The paste is made either by mixing the three powders with a little water or by grinding them all together.
Fry till you get the roasted odour. Then add one-fourth of a kilogram of sliced tomato. Cook till the tomato becomes soft. Now add the sautéed onion-ginger-garlic mixture. Add a tablespoon of vinegar and salt to taste and stir everything well.
When the ingredients are all well mixed, remove the pan from the fire and keep aside.
Take a banana leaf and show it over the fire to make it soft. After spreading a little oil on it, put some masala and place a slice of fish on it. Spread some more masala on top of the fish and then wrap the fish with the leaf and tie it up tightly.
Heat up a thick-bottomed pan and cook the fish packets in some oil poured into the pan. Cover and cook on a low fire, turning the fish periodically.
When the banana leaf becomes light brown, the fish is more or less done.
