Kerala’s own crispy Pappadams… and a lip-smacking delicacy with them. This month, let us go for it. Try it out with hot rice… need to say more?
Ingredients Quantity
Pappadam 15
Coconut (grated)   1 cup
Green chillies 4
Red chillies 2
Small onions
(finely chopped for seasoning)
4
Coconut oil ¼ cup
Mustard seeds ½ tsp
Curry leaves few
Salt to taste
 

Method of preparation

1. Pound the grated coconut with the green chillies, curry leaves and small onions in a mixer bowl.
2. Fry the pappadams lightly – the usual way – and then crumble them.
3. Now add salt and the coconut mixture to it and mix.
4. Crackle the mustard seeds in coconut oil and then sauté the dry red chillies, chopped small onions and curry leaves.
5. Add the pappadam-coconut mixture and stir well.
6. Lower the flame and cook till done.
7. Serve hot.
