Chicken Thoran is now a beloved side dish in many a non-vegetarian feasts across Kerala. The sautéed chicken recipe is famous for its enhanced spice mix, cooked specially with a set of ingredients that are known to elevate any thoran. Try it out at home, and you will have an instant favourite the first time your family members taste it.
Ingredients
Chicken (cut into small pieces) – ½ kg (boneless)
Onions (sliced) – 2 cups
Garlic (chopped) – 2 tsp.
Ginger (chopped) – 2 tsp.
Green chillies (chopped) – 8 no.
Chicken masala powder – 2 tsp.
Pepper (crushed) – 1 tsp.
Cumin seeds – 1 tsp.
Coconut (grated) – 1 cup
Curry leaves
Coriander leaves – ½ cup
Salt
Oil
Mustard seeds – 1 tsp.
Urad dal – 1 tsp.
Bay leaf
Method of Preparation
Heat three teaspoons of oil in a kadai (big pan). Put mustard seeds, urad dal, cumin seeds, curry leaves, ginger and garlic. Now add green chillies and big onions. Stir and sauté for some time and add the chicken pieces. Mix gently. Add chicken masala, crushed pepper, turmeric powder and salt. Sauté well.
You may now add two cups of water and the bay leaf. Cover the vessel and cook well. When all of the water is absorbed, add grated coconut. Mix well. Cook for some more time. Add chopped coriander leaves and stir a bit.
