Chicken Varavu is a popular Malabar dish.
Ingredients
Chicken - 400 gms
Chilli Powder - 2 tsp
Turmeric Powder - ½ tsp
Coriander Powder - 1 tbs
Pepper Powder - 1 tbs
Chicken Masala - 2 tsp
Salt to taste
Cumin - 1 tsp
Sliced Onion - 2
Chopped Tomatoes- 1
Green chilles - 4
Green Chilli Paste - 1 tsp
Ginger Paste - 1 tsp
Garlic Paste - 1 tsp
Coconut Oil - 4 tbs
Scraped Coconut - 1 cup
Curry Leaves - 4 sprigs
Method of Preparation
Mix chicken pieces with salt to taste, chilli powder, turmeric powder and chicken masala. Heat some oil in a pan. Add the sliced onion pieces and a small amount of salt into the pan and stir well. Simultaneously take another pan and roast the scraped coconut in it.
Add garlic paste, green chilly paste and ginger paste to the stirred onion pieces and stir well until it becomes transparent. Add the coriander powder and curry leaves to it. Meanwhiile, stir the scrapped coconut as well.
Add chopped tomatoes and green chilil into the onion and stir well. Next, add the spice-marinated chicken pieces in this mixture. Cover the pan and leave to cook.
Add coconut oil, cumin seeds and curry leaves into the scraped coconut that is being roasted in a separate pan.
Add some pepper powder to the chicken and mix it well. Add the roasted coconut mixture to the chicken. Mix it well. Chicken masala or garam masala may be added at this juncture for taste. Heat well and serve.
