Red Chillies - 10
Shallots - 10
Coriander – 2 tablespoon
Salt to taste
Cumin seeds
Wild Curry leaves

Method of preparation

Take an earthen pot and heat it. Add red chillies and coriander into it.  Stir it till the mixture become dark brown.   Make a paste of the fried mixture, turmeric, cumin seeds and shallots. The use of spices is kept to a minimum. For grinding they usually use traditional grinding stone. Now the paste is ready.

Heat an earthen pot and pour in some water. Next, add the chicken pieces into it and cover the pot and leave to cook. When it is half cooked, add the paste into it. Stir well. Add salt to taste. Cover the pot and leave it to cook well. Add curry leaves after some time.  When it is fully cooked, remove the pot from the flame. Take the Koyi Saru in another pot and serve it along with rice. You will find it hard to believe that no oil is used for cooking this chicken dish.
