Kozhuva Varuthathu (Anchovies Fry)


Our homemade recipe of Anchovies Fry or Kozhuva Varuthathu has always attracted a high amount of attention. People who taste the dish on our shores can never have enough of it, and the authentic Kerala style of the delicacy is what truly elevates it. The spice mix and technique below take one on a soft and crunchy ride through our shores, a trip one must never miss out on.

Ingredients
Kozhuva - 200gms
Ginger/Garlic Paste - 5gms
Lime Juice - 1 no
Salt - to taste
ChilliPowder - 1 table spoon
Whole Black Pepper - 10 no
Turmeric Powder - 1 tea spoon
Rice Flour - 1/2 tea spoon
Curry Leaves - few
Oil - to fry the fish
Salad - to serve with the fish

Method of Preparation
Clean and wash the fish. Squeeze out all the water. Grind chilli powder, whole black pepper, turmeric powder and rice flour to a fine paste. Add ginger garlic paste and salt to taste. Marinate the fish with the paste. Add lime juice. Keep it for 15 minutes.

Heat the oil in a kadai and fry the fish on slow flame, till crisp. When the fish is almost done, add curry leaves into the oil. Fry it for a minute. Remove the fish and curry leaves from the oil.

Serve hot with salads.
