Mappila cuisine offers a vibrant and diverse breakfast spread that reflects the rich culinary heritage of Kerala’s Malabar region. From soft and fluffy puttu and pathiri to crispy porotta and delicate vellayappam, breakfast is a hearty and flavorful affair, often paired with scrumptious vegetables, fish or meat curries. Alongside these staples, Mappila households take pride in a wide array of traditional fried snacks, including timeless favorites like achappam, anniyappam, kalathappam, and kuzhalappam. These dishes do not merely indulge the taste buds - they are expressions of culture, comfort, and community, enjoyed across generations.
Mappila cuisine features a variety of nourishing rice soups that are both comforting and flavorful. From paal kanji to jeeraka kanji, each type brings its own unique blend of ingredients and health benefits.

The breakfast dishes include puttu, pathiri, porotta, vellayappam, idiyappam (nul puttu), dosa, and uppumavu, accompanied by a variety of curries, particularly those made with chickpeas, green gram, potatoes, etc., or with fish or meat.

The fried snacks include achappam, kuzhiyappam, unniyappam, kalathappam, kuzhalappam, irachippathiri, madakkippathiri,kulusiyappam, mudachilappam, kanchirakkuru, cake, chuttupathiri, turkippathiri, chembappam, neyyappam, aulosunda, poorappodi, kaiveeshi, unnakkai, karakkappam, maniyappam, chukkappam, poovada, unda, madakku, mukkippori, banana chips, tapioca chips, potato chips, kozhissirva, manda, bellappola, and others. The most loved sweet dish in Mappila cuisine is haluva (halwa) which is made with coconut oil. This gives it a distinctive taste and makes it healthier compared to other Indian versions of halwa, which typically use ghee.

There are different types of rice soups, including paal kanji, kozhi kanji (rice and chicken soup), rava kanji, parippu kanji (lentil-based rice soup), cherupayar kanji (green gram soup), and jeeraka kanji (cumin-flavored rice soup). Egg-based dishes include muttamala, mutta surka, mutta marichath, musara, muttapathiri, muttathappam, mutta roast, panchara patta, and panchara seer.
