Pathiri, Mutton Stew, Mappila Samosa

It is typically served with flavorful curries made from chicken, mutton, or beef. Kallummakkaya (mussels) is another regional specialty which is prepared  and served in multiple ways. They are made into stir-fries or curries or deep-fried for a crispy texture. Mappila Samosa A popular snack in Mappila cuisine is the Mappila samosa. While traditional samosas often contain spiced potatoes and peas, the Mappila samosa is renowned for its meat-based fillings. They are typically made using minced beef or chicken, seasoned with a blend of spices like black pepper, cardamom, and clove. This choice of filling underscores the Mappila community's preference for non-vegetarian delicacies.​ The outer layer is typically crafted from refined wheat flour (maida), rolled thin to achieve a crisp texture upon frying. The pastry's preparation and folding techniques may vary, reflecting regional nuances. Deep-frying it in oil is the standard method, resulting in a golden-brown, crispy exterior that encases the flavorful filling.​ Beyond its delightful taste, the Mappila samosa holds cultural importance. It is a staple during festive occasions, religious celebrations, and as an evening snack accompanied by tea. Dosa While dosa is widely consumed across India, the Mappilas have their own distinctive version of it. Their crispy dosa is often paired with a rich, spicy beef curry made with locally sourced spices, coconut milk, and tamarind, creating a unique and flavorful combination. Mutton Stew This is another beloved dish, featuring tender meat simmered in a mild, coconut milk-based gravy. Distinct from traditional curries, it has a delicate blend of spices that enhance the natural flavors of the meat.
